Simple Oatmeal Banana Muffins (no flour)
These muffins are super simple as you throw it all in a blender, but they come out so moist and delicious. My kids love to have these in their lunch boxes each week, and they are full of all the good stuff.

- 1½ cups Oats blended into a flour
- ½ cup Roasted pumpkin squash
- 1 large Banana
- 1 Egg
- 1 tsp Vanilla Essence (extract)
- 2-3 tbsp Coconut Sugar
- 1½ tsp Baking powder
- ½ tsp Baking Soda
- 1 tsp Cinnamon
- 2-3 Medjool Dates optional
- ¼ cup Walnuts optional
- 1 dash Milk or juice
Turn oven onto 180° and line/spray a muffin tray.
Blend oats in the blender until they are a fine powder.
Add the rest of the ingredients except for the walnuts and dates.
Blend together until well combined. It should be thick but still runny. If it is too dry, add a dash of juice/milk.
Then add walnuts and dates (optional) and mix with a spoon.
Spoon into muffin tray and place into the oven.
Bake for 15-18 minutes. They should bounce back when lightly touched.
Allow to cool for 5 minutes in the tray before transferring to a cooling rack.
- You can also add other fruit such as apples, blueberries or strawberries.
- My kids love a butter icing on top, so feel free to whip this up if you are that way inclined.
