Kids Lunch Box ideas: Sushi Sandwich Recipe

Do your kids love Sushi? Well try this sushi sandwich that you can put in their lunch box without the usual sushi mess. They will love to eat sushi this way and be requesting it each day for lunch.

Ingredients
  

  • 1 cup Cooked sushi rice
  • 1 tbsp Sushi seasoning
  • 2 Slices Tofu or chicken, tuna, ham, prawns
  • 1 Egg fried into a square shape
  • Spinach Leaves
  • ¼ cup Roasted pumpkin or sweet potato
  • ¼ cup Sauerkraut optional
  • 1 tbsp Mayonnaise
  • 1 tbsp Soy sauce or Tamari for Gluten Free
  • 1 tbsp Pickled ginger optional
  • ½ tsp Wasabi optional

Instructions
 

  • Cook the sushi rice according to the instructions.
  • Place on the sushi rice seasoning onto the rice and allow to cool.
  • Place the sushi rice onto the nori sheet in a square shape, but on an angle to the square shape of the nori sheet (see above picture).
  • Place all other ingredients that you like on top (see above for other options)
  • Wet the edges with water using a pastry brush, then fold the edges together in the middle. Gently hold it together for a moment until it holds its shape.
  • Then you can either leave it like that, wrap in glad wrap or cut it in half. Serve with some ginger and wasbi (optional).

Notes

You can even put the wasbi, soy and ginger in the sandwich if you prefer.  Makes it much easier for the kids.
