Veggie Packed Vegan Fried Rice

This is a delicious vegan fried rice recipe that is full of vegetables that I randomly threw together one night for dinner & it is now a family favourite. My 3 year old son actually wanted to eat this instead of the pizza my husband ordered… That’s massive as my son is a big pizza fan!!

I’ve made alot of fried rice in my time & it just never taste that good. It was always abit bland & never really got the family wanting more… But I hit the nail on the head this time… Check out what I used below!

So as you can probably tell, I like to use a variety of vegetables. I also don’t just use plain rice. I like to add quinoa. This is optional but I love the extra nutrition that it gives to the meal. Now you don’t have to use everything that I used, feel free to add what you have in the fridge. You can also add broccoli, cauliflower, peas, beans, snow peas, zuchinni… honestly just use what you have available.

Ingredients for Easy Vegan Fried Rice:

Vegetables:

  • Pre- cooked (best day old) rice & quinoa blend
  • Garlic
  • Corn off the cob (or frozen corn)
  • Red onion
  • Red cabbage
  • Mushroom
  • Red Capsicum
  • Carrot

Sauce:

  • Light soy sauce
  • Sweet Soy Sauce Kecap Manis
  • Sesame oil

Garnish:

  • Spring onion
  • Chilli sauce
  • Fried shallots

So I prefer to cook the rice the day before, but it is not the end if the world if you don’t. So I like to cook the rice with some quinoa. Rinse the rice & quinoa… I can not emphasize this enough. Rinse until the water is nearly clear. Then add water & bring to the boil. Place the lid on & cook until cooked. Then leave the rice on the stove top to rest. So it is very simple from here on out to create the vegan fried rice recipe… Heat a fry pan & place a dash of your preferred oil in the pan (or water if you prefer less oil). I like to use peanut oil for my fried rice but only a teaspoon or so. Then add all the vegetables & garlic.

Fry off for 2-3minutes & then add the precooked rice.

Fry off for another 2-3minutes. Then add the soy sauce, Sweet Soy Sauce Kecap Manis & sesame oil. Mix for a further minute and then serve.

I like to serve the vegan fried rice in a bowl with some chopped spring onion, chilli sauce & fried shallots…. If you want to add meat, you can cook this in a separate pan on the side & then add to the dish. This makes the vegan fried rice recipe very flexible to suit everyone in the house.

Vegan Fried Rice Recipe (even the kids will love)

This is the most simple yet delicious vegan fried rice you will ever try & it has an abundance of sneaky vegetables that the kids will enjoy. You can throw it together in no time so its great to have on a night when you have nothing prepared.

Ingredients
  

  • 1 tsp peanut oil (or oil of choice)
  • 2 cloves garlic finely diced
  • ½ cup corn cut off the cob
  • ½ cup red cabbage diced
  • ½ red onion diced
  • ½ cup red capsicum diced
  • ½ cup mushrooms diced
  • ½ cup carrots diced
  • 2 tbsp soy sauce
  • 1 tbsp Sweet Soy Sauce Kecap Manis
  • 1 tsp sesame oil
  • 2 spring onions green part only
  • chilli oil (optional)
  • cups cooked rice & quinoa

Instructions
 

  • Heat the fry pan & add a dash of peanut oil.
  • Add all the garlic, onion & vegetables to the fry pan.
  • Fry off for 2-3minutes & then add the rice/quinoa mix
  • Fry off for 2-3minutes & then add the soy sauce, kecap mannis & sesame oil.
  • Fry off for another 1-2minutes & serve.
  • Serve with some spring onion, fried shallots & chilli oil (optional).

Notes

NB.  You can cook some meat in a separate fry pan & then add to the final dish for the meat lovers in the family.  Chicken, bacon or even sausages would work well in this dish. 
  • You can add any vegetables you like to this dish – zuchinni, peas, broccoli, cauliflower, beans, snow peas… The more the merrier…
