Lunch Box Ideas for Kids: Sushi Sandwich Recipe

So my daughter started school this year, and has now been diagnosed with a gluten and dairy intolerance. This means that have become very creative with her lunches. No longer can I put in the same old salad sandwich in her lunch box each day. So I have come up with this Sushi Sandwich recipe. It is super simple to make, you can make it the night before, ready for the morning rush. The best thing is, it does not make a mess in her school lunch box. Also, I can still sneak in extra vegetables that she will enjoy!

How to make the Kids Sushi Sandwiches:

These sushi sandwiches are super simple to make and you can make them ahead of time. You will need the following ingredients:

Sushi Sandwich Ingredients:

Fillings:

  • Sauerkraut
  • Tofu (or chicken, egg, ham, prawns or any meat you like)
  • Spinach
  • Mayonnaise
  • Avocado
  • Spinach
  • Pumpkin
  • Pickled Ginger
  • Cucumber
  • Carrot

You can choose whatever toppings that you usually like in your sushi and just place it in the sushi sandwich. It is much easier to eat and so much cleaner for the kids to eat at school. Be sure to add some vegetables to this delicious school lunch as this is where you can “sneak” more vegetables into your kids lunch boxes.

How to make the Sushi Sandwich:

Make the sushi rice according to the packet instructions. Then lay the rice on the nori sheet in a square in the middle, with the corners going to the straight edges (see photo as that is very hard to explain).

Then place the toppings that you like on top in any order. You can even top it with more rice if you need too. I like to finish with tofu. Wet the nori (I use a pastry brush) with water and then bring all the 4 corners in together. Hold it in place for a moment or two until it sets. Then you can wrap it in cling film if you like or just place it in the lunch box with some soy sauce. We use tamari as my daughter can not have gluten. I like to leave my daughters whole, but you can cut it in half to make it more “sandwich” like.

And you are done. It is super simple and taste amazing. Your kids will love having something new in their lunch box and they will be begging for more each day. You can make them 1-2 days ahead of time and just store them in the fridge. Just be sure to sneak something green in there too.

Kids Lunch Box ideas: Sushi Sandwich Recipe

Do your kids love Sushi? Well try this sushi sandwich that you can put in their lunch box without the usual sushi mess. They will love to eat sushi this way and be requesting it each day for lunch.

Ingredients
  

  • 1 cup Cooked sushi rice
  • 1 tbsp Sushi seasoning
  • 2 Slices Tofu or chicken, tuna, ham, prawns
  • 1 Egg fried into a square shape
  • Spinach Leaves
  • ¼ cup Roasted pumpkin or sweet potato
  • ¼ cup Sauerkraut optional
  • 1 tbsp Mayonnaise
  • 1 tbsp Soy sauce or Tamari for Gluten Free
  • 1 tbsp Pickled ginger optional
  • ½ tsp Wasabi optional

Instructions
 

  • Cook the sushi rice according to the instructions.
  • Place on the sushi rice seasoning onto the rice and allow to cool.
  • Place the sushi rice onto the nori sheet in a square shape, but on an angle to the square shape of the nori sheet (see above picture).
  • Place all other ingredients that you like on top (see above for other options)
  • Wet the edges with water using a pastry brush, then fold the edges together in the middle. Gently hold it together for a moment until it holds its shape.
  • Then you can either leave it like that, wrap in glad wrap or cut it in half. Serve with some ginger and wasbi (optional).

Notes

You can even put the wasbi, soy and ginger in the sandwich if you prefer.  Makes it much easier for the kids.

    My husband works on the road with no access to a microwave, hates deli meat, and I finally found something he might want to actually eat!!! I can’t wait to try this!
