Lunch Box Ideas for Kids: Cauliflower Pizza Scroll recipe
So my daughter started school this year, & in our parents group chat, there were big discussions on “what do I put in my child’s lunch box?” “what ideas do you have for your kids lunch?” So photos came out each morning & it made me think… I need to get more creative with my daughter’s lunches & decided to make Cauliflower Pizza Scrolls….
I love sneaking vegetables into my children’s meals & I don’t want to start lacking in the school lunch box department. That’s how I came up with this Cauliflower Pizza Scroll recipe that is bursting with hidden vegetables.

How to make the Kids Lunch Box Cauliflower Pizza Scroll base:
These cauliflower pizza scrolls are simple to throw together & only require 3 ingredients for the base. To make the pizza base you will need:
Cauliflower Pizza Scroll Ingredients:
- wholemeal self-raising flour
- greek yoghurt
- steamed grated cauliflower
Place these ingredients into a bowl & then mix together. Once it is in a sticky mess, roll it out onto a bench & knead adding more flour as required. Once it is no longer sticky, place it in a bowl to rest while you organise your toppings.
Topping ideas for the cauliflower pizza scroll recipe:
- tomato paste sprinkled with oregano, garlic powder & onion powder
- pesto
- zuchinni (raw or roasted)
- roasted eggplant
- spinach/silverbeet
- roast pumpkin
- grated broccoli
- onion/leek
- feta
- mozzarella
- ham
- pineapple
- salami
- olives
You can choose whatever toppings that you usually like on a pizza & add them to the pizza scrolls, but be sure to add some vegetables to this delicious school lunch. This is where the “sneaking” of more vegetables into your kids lunch box idea begins to develop.
How to make the cauliflower pizza scroll:
Sprinkle some flour out on the table & roll out the cauliflower pizza dough into a rectangular shape. If it gets too sticky, be sure to add some more flour. Then let the fun begin. Add whatever toppings that your kids like but be sure to sneak some vegetables into the scroll.
Once you have all your toppings on your pizza, its time to roll it up. Make sure to roll it long end to long end, so that it does not get too thick. If it sticks to the table, then use a knife to un-stick it & place extra flour on the scroll. Then cut into 1 inch size scrolls & place onto a baking tray with non stick parchment. For sustainability reasons, I like to use reusable non-stick baking paper. Finally, I like to sprinkle some more cheese on top. Place into the oven at 180deg for 15-20min.
My kids love these cauliflower pizza scrolls served warm, drizzled with some BBQ sauce. They are great to put into the school lunch boxes for a veggie packed lunch or as an after school snack. Give it a try and let me know what you think!!

Cauliflower Pizza Scroll Recipe
Ingredients
- 1 cup wholemeal flour
- ¾ cup greek yoghurt
- ¾ cup steamed cauliflower grated
- 2 tbsp tomato paste
- ½ tsp oregano optional
- ½ tsp garlic powder optional
- ½ tsp onion powder optional
- ½ cup mozzarella cheese
- ½ cup spinach
- ¼ cup zucchini
- 2 slices ham
- 2 tbsp onion
Instructions
- Turn your oven onto 180deg
- Place the flour, yoghurt & cauliflower into a bowl & mix together.
- Once combined, roll out onto a bench & knead for 2-3min until it is not sticky. You may need to add more flour.
- Place back into the bowl to sit whilst you chop up the vegetables & toppings you wish to place on your pizza scroll.
- Scatter some flour on the bench & then roll out the cauliflower pizza dough mixture into a rectangular shape, until it is 1cm thick.
- Spread some tomato paste on top, & sprinkle with oregano, garlic & onion powder.
- Add whatever toppings you like but be sure to sneak in some vegetables. You can add capsicum, onion, spinach, sweet potato, olives, pineapple or zucchini. I like to use zucchini, spinach, onion & ham.
- Once you have your toppings in place, roll up the base from long side to long side. Then cut into 2cm slices. Place on to a non stick tray & sprinkle with cheese.
- Place into the oven & cook for 15-20min, until they are golden brown. Place onto a cooler rack
- Drizzle with BBQ sauce and serve
- Store left overs in the fridge & they will last 3-4days.
