Lunch Box Ideas for Kids: Simple Banana Oatmeal Muffins (no flour)

Need something to put in your kids lunch box that is filled with all of the good stuff and is going to keep them full for long periods? Try this super Simple Banana Oatmeal Muffin. They don’t require any white flour, and they are hidden with fruit, nuts (optional) and even one sneaky vegetable. But they are so sweet, moist and your children will be none the wiser. They are so super delicious that I have even started to take these to work too…

Ingredients you will need for the Banana Oatmeal Muffins:

  • Oats
  • Baked Butternut Squash (or sugar free apple sauce)
  • Banana
  • Coconut Sugar (or brown sugar, maple syrup, honey)
  • Vanilla Bean Extract (or vanilla essence)
  • Egg (or flaxmeal)
  • dash of milk or juice (only if too dry)
  • Baking Soda
  • Baking Powder
  • Salt
  • Cinnamon
  • Medjool dates
  • Optional extras: Walnuts, choc chips, apple, blueberries.

How to make the Banana Oatmeal Muffins:

Heat the oven to 180deg and spray the muffin tray (or use cupcake liners). Then place the oats into the blender and blend until it is a fine powder. Place the rest of the ingredients in the blender minus the optional extras. If it is still slightly dry, add some milk or juice. I like to add apple juice as it just adds a tiny bit of sweetness that the kids love.

Then add the optional extras and mix with a spoon. Once it is well combined, place into the muffin tray and place into the oven for 15-18 minutes depending on the size of your muffins. The smaller they are, the quicker they will cook, so keep an eye on them.

You will know they are cooked when they bounce back lightly when touched. Remove them from the oven and allow them to cool in the muffin tin for 5 minutes. Then place onto a cooling rack.

They taste best when they are still slightly warm but they store well for 3 days in an air tight container in the cupboard. You can serve them with butter if your that way inclined. Otherwise, place into your kids lunch boxes, or freeze so that you always have a lunch time treat handy each morning.

Simple Oatmeal Banana Muffins (no flour)

These muffins are super simple as you throw it all in a blender, but they come out so moist and delicious. My kids love to have these in their lunch boxes each week, and they are full of all the good stuff.

Cook Time 15 minutes
Course Snack
Servings 6 muffins

Equipment

  • 1 Blender

Ingredients
  

  • cups Oats blended into a flour
  • ½ cup Roasted pumpkin squash
  • 1 large Banana
  • 1 Egg
  • 1 tsp Vanilla Essence (extract)
  • 2-3 tbsp Coconut Sugar
  • tsp Baking powder
  • ½ tsp Baking Soda
  • 1 tsp Cinnamon
  • 2-3 Medjool Dates optional
  • ¼ cup Walnuts optional
  • 1 dash Milk or juice

Instructions
 

  • Turn oven onto 180° and line/spray a muffin tray.
  • Blend oats in the blender until they are a fine powder.
  • Add the rest of the ingredients except for the walnuts and dates.
  • Blend together until well combined. It should be thick but still runny. If it is too dry, add a dash of juice/milk.
  • Then add walnuts and dates (optional) and mix with a spoon.
  • Spoon into muffin tray and place into the oven.
  • Bake for 15-18 minutes. They should bounce back when lightly touched.
  • Allow to cool for 5 minutes in the tray before transferring to a cooling rack.

Notes

  • You can also add other fruit such as apples, blueberries or strawberries. 
  • My kids love a butter icing on top, so feel free to whip this up if you are that way inclined.
