Easy Air Fryer Corn Ribs recipe (with dipping sauce)

I still remember when I first tried a corn rib recipe: they were so juicy & amazing. They are simple, delicious & you can make them in less that 20 minutes. They are a play on the BBQ corn on the cob, mixed with some Mexican flavours & as they cook, they bend, so they end up looking like ribs. This air fryer corn rib recipe comes with a chilli dipping sauce that takes these corn ribs to the next level.

I love sneaking extra vegetables into each meal, so this is a great way to add to your quota of vegetables for the day, & get your kids trying vegetables a different way. We love having this as a side dish, or as a snack.

The ingredients you need for the Air Fryer Corn Ribs Recipe:

  • corn
  • spices – garlic, onion & smoked paprika
  • spray oil
chopped up corn on chopping board with a small bowl of spices places next to it.

How to make the Corn ribs:

The hardest part of this recipe is actually cutting the corn. I know some people like to leave the corn pieces long & you really get that rib sort of look, but no matter how hard I tried, I just couldn’t get the pieces straight & even. So I decided to cut the corn in half & then cut it length ways into 4 pieces.

Spray the corn with some oil & then place all the ingredients into a bag or into a container, place on the lid, & shake shake shake.

Place the corn pieces evenly into the air fryer basket (or oven). Cook for 12-15min on 190degrees. Continue to check to make sure that they do not burn.

While they are cooking, you can make a delicious dipping sauce. I just whipped together some:

Sprinkle with some coriander & your corn ribs are complete…

My kids love these as a side dish, but also as a snack after school. This is another super simple way to add extra vegetables into your diet but taste super delicious. Your kids wont even know that they are eating vegetables.

Air Fryer Corn Ribs Recipe

These are the most simple, yet delicious corn dishes that you will eat. The hardest part is just chopping the corn. You can also make these in the oven, but they are quick & simple in the air fryer.
Prep Time 5 minutes
Cook Time 14 minutes
Course Side Dish
Servings 4 people

Equipment

  • 1 air fryer

Ingredients
  

  • 2 whole corn (fresh), chopped into ¼ length ways
  • 1 tsp smoked paprika
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • Spray oil extra virgin

Chilli Mayo

  • 2 tbsp mayo
  • 1 tsp chili sauce.

Instructions
 

  • Chop the corn in half, & then stand it up on the flat side & cut length ways into 4 pieces.
  • Place all the ingredients into a container (or bag) & then shake until all the corn is coated in the spices.
  • Lay them out evenly in the air fryer (or oven) & bake for 12-15min on 190deg.
  • They are ready when they are slightly brown.

Chili Mayo

  • To make the chili mayo, mix some mayo & chilli sauce in & bowl.

Notes

NB:  Please be extra careful when chopping the corn as you can easily slip & cut yourself.  If you do not feel confident chopping the corn length ways, then just cut them into small circles.  It will still taste just as delicious.
Best to use fresh corn.  If you have to use frozen, make sure you thaw it first.
