Tofu Scramble & Vegetable Wrap

I love tofu. It is so versatile and is a great vegan source of protein. When you make it like this, it really taste like cheesy eggs. I mean, I don’t really like eggs anymore but I do love this scramble. And when you put it in a wrap, its next level…
Ingredients for Tofu Scramble & Vegetable Wrap:
- Firm Tofu – I like to use organic.
- Chili Oil – optional, otherwise you can use chili flakes if you like a hit without the calories.
- Vegetables – I like to use leek, zuchinni, mushrooms, broccoli and cauliflower.
- Nutritional Yeast – I call this my vegan cheese. You can get it from the health section of the supermarket.
- Turmeric – get the best quality you can afford. It will make all the difference.
- Garlic Powder – optional
- Wraps – wholemeal & I like to use ones that have the least amount of sodium as possible.
- Salad for the wraps – I like to use lettuce, red cabbage, capsicum, cucumber & carrot.

- Avocado
So I like to make bulk tofu scramble as it is so versatile and you can use it with anything. On salad, in a wrap, roll or toast (just like eggs if that’s the way you like to think about it).
How to make Tofu Scramble & Vegetable wrap:
Now I don’t usually cook with oil, and you do not need to for this recipe, but I like to use chili oil because it is delicious. Then fry up the vegetables for 2-3 minutes, then crumble the tofu in your hands and add to the vegetables. Fry off until it is slightly browned. You may need to add water to stop it from sticking. You can also use vegetable stock if you prefer.
Then once it is browned and vegetables are softened, you can add the nutritional yeast, turmeric & garlic. Add a dash of water as required and it is ready.
To make the wrap, lay the hummus, and avocado on the bottom, place the lettuce and other vegetables on top, followed by the tofu scramble. Add any sauces you may like such as sweet chili, hot sauce or even BBQ sauce. I like to serve this with a salad, then sit down and enjoy…

Tofu Scramble & Vegetable Wrap
Equipment
- Fry Pan
Ingredients
- 1 tbsp chili oil optional
- 350g Firm Tofu I like to use organic if possible
- 1/2 cup each of leek, mushroom, capsicum & zuchinni use what you have in the fridge
- 1/2 cup broccoli & cauliflower I like to bath precook these at the start of the week.
- 3 tbsp Nutritional yeast (use 2 tbsp if you use less vegetables)
- 1/4 tsp turmeric
- 1/4 tsp garlic
Instructions
- Place the oil in the fry pan on a medium heat (if you do not want to use oil, you can use water).
- Add the vegetables & begin to fry them off. Add more water (or vege stock) if required
- Crumble the tofu (I just use my hands) into the pan and cook until it is slightly brown. Continue to add splashes of water/stock as required.
- Once it is browned slightly and the vegetables are soft, add the nutritional yeast, turmeric and garlic. Mix well until it is combined.
- Heat up your wrap as per the instructions. Lay all your fillings and then wrap it up. I like to use hummus (see recipe), avocado, lettuce, carrot, red cabbage & hot sauce.
