These are quick to make, using simple ingredients and only one blender required. I have them as my families number one go to snack when your in between meals. They are just so delicious that you can not stop at one. They are quick to make as you just throw it all in the blender and away you go. You can use this as a base recipe and modify it as you like…

I make these weekly to put in lunch boxes, for school and for work. They stop me from grabbing the sweet treats that are always on offer in the tea room.

My kids love to eat these, just as much as they love to help make them. They love to roll the little balls (then eat some) and then roll them in the coconut. Its a great little recipe that is family friendly and keeps the kids busy. Just have to make sure that they don’t eat them all….

It requires the following ingredients:

  • Oats – whole oats
  • Coconut – desiccated or shredded – i prefer desiccated
  • Cocoa/Cacao
  • Dates – soaked for 10min in boiling water. Make sure to take the seeds out if they have them. Keep the water to add to the mixture if it is too wet
  • Almond paste – use whatever nut paste you have. You can use peanut butter, cashew, ABC spread, or totally omit. Up to you…
  • Nuts & seeds – use what you have left in the cupboard. If you like it crunchy, then you can add them after you take it out of the blender. I used sunflower seeds and pepitas in this recipe
  • Flaxmeal, chia & hemp seeds – totally optional but I like them for their nutritional benefits.

This is a very simple recipe, place all the ingredients into a blender. I like to leave out the seeds so there is abit of crunch, but this is optional. You don’t even have to add them. Just put in what you have.

Next blend them all together. Blend until it creates a solid paste. I then pour it into a bowl and add the seeds. But this is optional. if you are not adding seeds, then skip this step.

Mix all the seeds into the paste and then take a tablespoon of the mixture. Roll it into a ball and the roll in the coconut.

Place into a container and if you can resist, place them in the fridge.

Then they are done! So simple and so delicious. This recipe is so versatile. I sometimes add dried apricots and white chocolate yummmm…

Ingredients
  

  • 3 cups Oats
  • 1 cup Coconut plus extra to roll energy balls in
  • 1/4 cup Cocoa
  • 1 tsp cinnamon optional
  • 1 cup chopped and soaked dates take out seed and chop up, soak in boiling water 10min, keep the soaking water.
  • 2 tbsp almond paste or peanut butter, cashew butter… or omit if you like
  • 1 cup nuts & seeds you can pick, I like sunflower seeds, pepitas, cashews
  • 1 tbsp flaxmeal, chia & hempseeds optional

Instructions
 

  • Place all the ingredients into the blender. Feel free to leave out the seeds if you like a little bit of crunch in your energy balls.
  • Blend until it makes a paste. You may need to add some of the water from the soaking dates if its too dry and not sticking together
  • Put the mixture into a bowl and add the seeds if you have not added them already. Mix together with a spoon.
  • Take out about 1tbsp of the mixture and roll into ball, then place into the coconut.
  • Eat right away or leave in the fridge for up to 7days

Notes:

Ingredient Substitutes

  • Nuts – you can use walnuts, cashews, pecans or peanuts. Just make sure it is one cup all up.
  • Almond butter – you can use any nut butter you like. Cashew also works really well, or peanut butter.

Storage

They will store in the fridge for 7days or in the freezer for up to 3months.
